St. Patrick’s Day is always in the running for my favorite holiday.

When else do you get up at 6 in the morning, drink Irish Car Bombs, green beer, and whiskey until your face falls off, and then pass out by noon?

I suppose that’s just a regular Tuesday for some of you Irish folks, but here in Chicago, that’s how we do St. Patrick’s Day.

And the glorious holiday upon us, there’s no better time to start planning your boozy beverage of choice. Now granted, I can’t drink an ice cream float and then go party like nothing happened, I’m going to need a good hour to recover from that.

No, I’m more of a drink cheap beer all day kinda guy, doing as best as I can to avoid the shots. It’s a marathon, not a sprint.

But for those of you looking to have a relatively chill St. Paddy’s Day with a fun cocktail, look no further.

Ingredients

3 cups of vanilla (or chocolate) ice cream
1 can of Guinness
One shot (or two) of Jameson
Chocolate syrup
Whipped cream
Caramel
